Mother's Day 2009

I had a wonderful mother's day! The day started off with Mia and Maco making me breakfast, while I read in bed!Mother's Day 001

Mia plays while Daddy cooks THE BEST breakfast ever!! Stuffed french toast with blueberries!! See below for recipe! You must try it!

Mia and Maco made me a gift certificate for a massage, bath, and dinner give by Hamilton Masseuse & Associates! They also got me a hanging plant, which I've been wanting so badly for the front of our house!!

Add some syrup and whip cream and you have the best breakfast in the entire world! And it's even fat free!!(Yah, right!)

 

Stuffed Blueberry French Toast

Blueberry Sauce:

1 cup sugar, 2 T cornstarch, 1/2 cup water, 2 cups unthawed frozen blueberries, 2 T fresh lemon juice, 1 T butter

French toast:

1 8oz cream cheese, softened, 3 T sugar, 1 T lemon juice, Grated zest of 1 lemon, 16 oz loaf French bread, 4 eggs, 1 cup whipping cream, 1/2 t vanilla

To make sauce: combine sugar and cornstarch in a medium saucepan. Add water and bring to a boil over medium heat. Add blueberries and reduce heat. Simmer about 8-10 mins. or until blueberries burst. Stir in lemon juice and butter. Keep warm until ready to serve.

To make french toast: Preheat oven to 200 degrees. In a small bowl, blend cream cheese, sugar, lemon juice and zest until smooth and creamy.Pack into a heavy-duty plastic bag(freezer bag). Set aside.

Cut bread into 10-12 slices, 1 1/2 inches thick. With a  thin, sharp knife, carefully cut a "pocket" in each slice; the pocket should be the width of the slice, being careful not to poke through the sides. Snip about 1/2-inch off one of the bottom corners of the cream-cheese-filled plastic bag. Twist the top of the bag, squishing the cream cheese into the snipped corner. Squeeze about 1 1/2 T of filling into each pocket.

In a large bowl, beat together eggs, cream and vanilla until eggs are thoroughly incorporated.  Then just coat the bread and cook like you would normally for french toast.

Serve immediately with warm blueberry sauce.

Ok, now that I took the time to write this entire recipe, someone needs to try it! You won't be sorry!! Trust me!!

Sittee came over for THE BEST dinner ever!! I'm not kidding. We had Jamaican Pork and it passed up my chicken parmesan that Maco makes, and is now my new favorite!

Jamaican Barbecued Pork Tenderloin

2 t firmly packed brown sugar, 1 t ground allspice, 1 t cinnamon, 1/2 t ginger, 1/2 t garlic powder, 1/2 t onion powder, 1/4 t cayenne pepper, 1/8 t ground cloves, 3/4 t salt(divided), 1/2 t freshly ground black pepper, 1 pork tenderloin, about 1 lb, trimmed of visible fat, 2 t white distilled vinegar, 1 1/2 t dark honey, 1 t tomato paste

In a small bowl, combine the brown sugar, allspice, cinnamon, ginger, onion powder, garlic powder, cayenne, cloves, 1/2 t salt, and the black pepper. Rub the spice mixture over the pork and let stand for 15 minutes.

In another small bowl, combine the vinegar, honey, tomato paste and 1/4 t salt. Whisk to blend. Set aside.

Preheat a gas grill or broiler to medium-high or 400 degrees. Away from the heat source, lightly oil the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from  the heat source.

Place the pork on the grill rack or broiler pan.  Grill or broil at medium-high heat, turning several times, until browned on all sides, 3 to 4 minutes total. Remove to a cooler part of the grill or reduce the heat and continue cooking for 14 to 16 minutes. Baste with the glaze and continue cooking until the pork is slightly pink inside and an instant-read thermometer inserted into the thickest part reads 160 degrees, 3 to 4 minutes longer. Transfer to a cutting board and let rest for 5 minutes before slicing.

To serve, slice the pork crosswise into 16 pieces.

I gave Mia some mashed potatoes and she loved them. I guess I haven't really given her potatoes in the mashed form before.

Mother's Day 044Maco, Mia,  Marna, and everyone made my mother's day so special! I felt very honored and loved! I know Josiah and my mom were looking down and smiling on us! It was a fabulous day with my family!
